Baked Apple Strawberry Crumble
This is a great treat to make for a breakfast, have for a snack, or serve as a dessert. Tastes great with a plain almond or coconut yogurt and you could add a fruit sauce on top!
Baked Apple Strawberry Crumble
Approx. 9 servings
You will need:
1 cup blended oats (oat flour)
½ cup blended pumpkin seeds
3 tbsp ground flax
1 tsp cinnamon
1 cup oats (whole)
¼ tsp salt
1/3 cup oat milk
1/3 cup grapeseed oil/coconut oil
1/3 cup maple syrup
4 small apples
1 cup of sliced strawberries (fresh or frozen)
1 tbsp water
Peel the apples and chop them into small pieces, and slice the strawberries if they aren’t already sliced. Place the fruit in an 8×8 or 9×9 baking pan and mix in 1 tbsp of water.
Preheat oven to 350. Blend oats a pumpkin seeds together then add to bowl with ground flax, cinnamon, whole oats, and salt. Lightly stir together dry ingredients and then add oat milk, oil, and maple syrup. Mix all ingredients together until it forms a thick and sticky mixture which you will then evenly spoon into the pan over the fruit. Using a spoon ran under some warm water evenly smooth out while pressing the mixture until it covers all of the fruit.
Place pan in over for 30 mins or until top is hardened and starting to brown and the bottom should be bubbling. Take pan out and let cool slightly before serving. Serve with some yogurt (we use plain almond or coconut yogurt) and you can always top with fresh fruit as well.
**If you aren’t nut free you can use almond milk instead of oatmilk.
