Breakfast Banana Oat Cookies
These cookies are great for a breakfast on the go or just a snack in between meals. They contain only natural sugars, are filling and vegan. They only use 6 simple ingredients and are easy to make!
Makes approx 6 cookies
You will need:
1 ripe banana
10 dates soaked (soaking dates helps to make them softer, soak for at least a couple hours in water or overnight)
1 1/2 cups of whole oats
1/4 tsp of cinnamon (plus extra for sprinkling)
1/4 tsp of baking soda
2 tbsp of raw pumpkin seeds
1/8 tsp of sea salt
- Preheat oven to 350 degrees and grease a cookie sheet.
- In a food processor add your banana, oats, dates, cinnamon, baking soda, and salt. Process until batter is smooth (it is ok to leave little chunks of dates). After batter is smooth add pumpkin seeds and stir in.
- Spoon batter onto cookie sheets into whatever size you prefer. Press batter down a bit and sprinkle cinnamon on top.
- Bake in over at 350 for approx 10 mins (less for smaller cookies and more for bigger ones). If cookies start to brown take them out of the oven. Let cool for 10 mins and then enjoy. Keep in a sealed container for up to 5 days (mine only lasted 2 days….they were too good not to eat).
